Classic Liquorice has its characteristic taste because it is made from the finest liquorice powder and because it is produced by the Maillard reaction, where milk protein and sugar react with each other in the pot. After boiling, the liquorice is poured into molds, where it solidifies overnight. It is then cut and passed through a veil (or curtain) of liquid chocolate. After drying, it is ready to be eaten.
